Travelers who venture to northern Spain will discover well-preserved medieval villages, postcard-perfect mountains and beaches, and some of the best food the country has to offer. On this tour of the region, you’ll explore historical, cultural, and culinary treasures in Bilbao, San Sebastián, Santander, Oviedo, and Santiago de Compostela. Then, head south, to the Castilla and Leon region, where you’ll explore Salamanca’s 13th-century university and marvel at Segovia’s imposing Roman aqueduct before making your final stop in bustling, cosmopolitan Madrid.

Meet your Utah Tech Instructors

Jen Meyer

I’m an associate professor of biochemistry at Utah Tech and have been teaching here for nearly 8 years. I’ve had an interest in wine for over 10 years. I’ve tried to integrate my love of wine into various aspects of my life, including my research at Utah Tech, where I focus on synthesizing derivatives of small molecules derived from grapes (among other things) and their potential to be used as therapeutics in a variety of diseases including diabetes and melanoma. Before I was at Utah Tech, I was teaching at DePaul University in Chicago, where I developed a senior student level course called Chemistry and Wine. In this course, students focused on identifying specific flavors in wine and tying them back to the chemicals responsible for the various flavors. We also studied the winemaking process. Since then, I’ve had the opportunity to wine taste throughout the Napa region in California, where I was fortunate enough to be able to tour several of the wineries’ chemistry labs. I’m looking forward to sharing what I have learned and of course touring the area and drinking wine with you!
